Ingredients

The ingredients are:
  • 68 grams tortillas (2 flour tortillas, 6 inch)
  • 2 tablespoons salsa
  • 3 to 4 ounces sliced bacon (3 to 4 slices, cooked crisp and crumbled)
  • 2 large eggs (well beaten)
  • 1/2 cup shredded cheese (Mexican blend cheese, divided)

How to Make

  • Step 1: Scramble eggs until desired doneness is reached.

  • Step 2: While eggs are cooking, heat tortillas in microwave for about 15 seconds or until softened.

  • Step 3: Spread 1 tablespoon of salsa on bottom half of tortilla.

  • Step 4: Place half the eggs over the salsa.

  • Step 5: Top eggs evenly with 1/4 cup of cheese.

  • Step 6: Place half of the bacon over the eggs and fold the top half of the tortilla over.

  • Step 7: Repeat steps 3, 4, 5 and 6 for remaining tortilla.

  • Step 8: Place both tortillas in a 10-inch skillet sprayed with cooking spray.

  • Step 9: Cook until lightly browned over medium heat on both sides, about 6 to 8 minutes.

  • Step 10: Cut each quesadilla in half; eat and enjoy.
