Step 1: Pour 1/2 inch canola oil into a skillet and heat up for frying.
Step 2: Clean and slice zucchini thinly.
Step 3: In soup bowl, crack eggs; whisk until frothy. Whisk in a milk. Season with salt and pepper.
Step 4: Place bread crumbs in another soup bowl.
Step 5: Dip each slice of zucchini in the eggs and then in the bread crumbs. Carefully place breaded zucchini in the hot oil. Fry until golden browned on both sides.
Step 6: Drain zucchini on a plate with a paper towel. Keep frying until done. You may have to add the other egg depending on the size of your zucchini, and add more bread crumbs as well.
