Step 1: Heat a non-stick skillet over medium-high heat. Add 2 tablespoons olive oil.
Step 2: Add chopped mushrooms and shallots, and season with salt and pepper. Saute veggies until dark and tender, 5-6 minutes. Remove from heat.
Step 3: Transfer veggies to a bowl, and return pan to stove top to preheat, to cook patties.
Step 4: Place turkey in a mixing bowl. Make a well in the center of the meat.
Step 5: Add sage, Worcestershire, bread crumbs, and beaten egg.
Step 6: Add veggie mixture and salt and pepper, as needed. Mix together. Make 4 patties. Cook patties 1-2 at a time, with 1 tablespoon olive oil heated over medium heat, about 6 minutes per side.
Step 7: Transfer to serving plates.
Step 8: Return pan to heat and add butter. When the butter has melted, whisk in flour, and cook 1-2 minutes.
Step 9: Whisk in broth and season gravy with poultry seasoning, salt and pepper. Thicken gravy to your liking, and serve over patties.
