Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • Crimini mushrooms (chopped, 8 mushrooms)
  • Shitake mushrooms (chopped, 8 mushrooms)
  • 1 shallot, chopped
  • Salt and pepper
  • 1 1/3 pounds ground turkey (20-21 ounce package)
  • 3 to 4 sprigs fresh sage, leaves stripped and chopped
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup bread crumbs (Italian)
  • 1 large egg (beaten)
  • FOR THE GRAVY
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth (or turkey broth)
  • 1 teaspoon poultry seasoning

How to Make

  • Step 1: Heat a non-stick skillet over medium-high heat. Add 2 tablespoons olive oil.

  • Step 2: Add chopped mushrooms and shallots, and season with salt and pepper. Saute veggies until dark and tender, 5-6 minutes. Remove from heat.

  • Step 3: Transfer veggies to a bowl, and return pan to stove top to preheat, to cook patties.

  • Step 4: Place turkey in a mixing bowl. Make a well in the center of the meat.

  • Step 5: Add sage, Worcestershire, bread crumbs, and beaten egg.

  • Step 6: Add veggie mixture and salt and pepper, as needed. Mix together. Make 4 patties. Cook patties 1-2 at a time, with 1 tablespoon olive oil heated over medium heat, about 6 minutes per side.

  • Step 7: Transfer to serving plates.

  • Step 8: Return pan to heat and add butter. When the butter has melted, whisk in flour, and cook 1-2 minutes.

  • Step 9: Whisk in broth and season gravy with poultry seasoning, salt and pepper. Thicken gravy to your liking, and serve over patties.
