Ingredients

The ingredients are:
  • 1 tablespoon oil (extra virgin olive oil)
  • 1/4 cup red onion, chopped
  • 1 clove garlic, minced
  • 1 can (15 ounce) garbanzo beans (chickpeas, rinsed and drained)
  • 1 small tomato, chopped (ripe)
  • 1/4 cup parmesan cheese, shredded
  • Salt and/or black pepper to taste
  • 1 tablespoon oil (extra virgin olive oil, additional)
  • 2 tablespoons fresh basil, sgredded

How to Make

  • Step 1: Heat oil in nonstick skillet and saute onion and garlic until soft.

  • Step 2: Add garbanzos and tomatoes to skillet and heat for 5 minutes.

  • Step 3: Place in a salad bowl and toss with additional olive oil, parmesan, fresh basil, salt, and black pepper.

  • Step 4: Serve warm or at room temperature.
