Ingredients

The ingredients are:
  • 1 cup dried pinto beans
  • 2 1/2 cups water
  • 1 beef bouillin cube (or chicken or vegetable bouillon cube)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 2 tablespoons minced onion (I was out of onion powder- you could use 1/2 tsp. instead)
  • 1/4 teaspoon baking soda
  • Salt (to taste)

How to Make

  • Step 1: Soak beans overnight in enough water to cover, then drain the next day.

  • Step 2: Place beans in a small crockpot with remaining ingredients.

  • Step 3: Cover and cook on low for about 4 hours or until beans are tender.

  • Step 4: Drain cooked beans and reserve liquid.

  • Step 5: Season beans to taste with salt and puree in a food processor or mash with a potato masher.

  • Step 6: Sprinkle with cheese, if desired, before serving.
