Ingredients

The ingredients are:
  • 28 ounces diced tomatoes with juice (I use fire-roasted)
  • 1 medium onion, chopped
  • 1 green poblano pepper, seeded and chopped
  • 1 red italian sweet pepper, seeded and chopped
  • 2 serrano or jalapeno chilies, seeded and chopped
  • 4 to 5 cloves garlic
  • 1 teaspoon cumin seed
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 1 to 2 tablespoons olive oil
  • 1/4 cup chopped cilantro

How to Make

  • Step 1: Saute peppers, onion, garlic and cumin seed in a large saucepan until lightly browned.

  • Step 2: Stir in tomatoes with juice, chili powder, salt and pepper.

  • Step 3: Cover and simmer for about 30 minutes.

  • Step 4: Let cool somewhat then pulse in a food processor (leave the chute open and cover with a towel if it is still warm) until it has a saucy yet chunky texture.

  • Step 5: Stir in chopped cilantro.

  • Step 6: Chill before using, if desired.
