  • 1 cup gluten free all purpose flour
  • 1/2 cup buckwheat flour
  • 1/4 cup millet flour
  • 1/4 cup ground flax seed
  • 1/4 cup gluten free oats
  • 1/8 cup gluten free oat flour
  • 1/8 cup teff
  • 1 teaspoon sea salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1/4 cup sparkling water or club soda
  • 2/3 cup vanilla yogurt (non dairy or dairy)
  • 1 tablespoon agave or honey
  • 1 teaspoon apple cider vinegar
  • 1/2 cup sunflower or pumpkin seeds
  • Gluten free oats, sesame seeds or sea salt for topping

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Spray a 9x5 loaf pan and set aside.

  • Step 3: Whisk together all the dry ingredients and set aside.

  • Step 4: Beat the eggs until frothy, then add the remaining liquid ingredients and blend well.

  • Step 5: Slowly mix the dry ingredients into the liquids and stir until thoroughly incorporated.

  • Step 6: Mix in any seeds last.

  • Step 7: Scoop dough into prepared pan and sprinkle with toppings of your choice.

  • Step 8: Bake for 35 minutes or until toothpick inserted in the middle comes out clean and a nice crust has formed.

  • Step 9: Remove from oven and cool on wire rack for 5-10 minutes.

  • Step 10: Then remove from pan and continue cooling on rack.

  • Step 11: Bread should be completely cool before slicing.
