Ingredients

The ingredients are:
  • 3 cups cooked chicken, cut into half inch cubes
  • 3/4 cup celery, chopped
  • 3/4 cup seedless red grapes, cut in half
  • 1 (14 ounce) can pineapple tidbits, drained
  • 1 (7 ounce) mandarin oranges, drained
  • 1/4 cup pecans, chopped
  • 1/4 cup mayonnaise (I use no fat mayo)
  • 1/8 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Lettuce Leaves

How to Make

  • Step 1: Combine Mayonnaise salt and pepper; mix well and set aside.

  • Step 2: Gently toss chicken, celery, grapes, pineapple, and oranges with half of the chopped pecans.

  • Step 3: Pour the mayonnaise mixture over the chicken mix, stir gently to coat.

  • Step 4: Serve on lettuce leaves and garnish with remaining pecans.
