Ingredients

The ingredients are:
  • 2 packages active dry yeast (2 1/2 teaspoons)
  • 1/3 cup warm water (105° to 115°F)
  • 2 cups soy beverage (or milk)
  • 2 tablespoons molasses
  • 3 tablespoons oil (vegetable oil, and more for greasing bowl)
  • 2 tablespoons buckwheat honey (or alfalfa honey)
  • 6 to 6 1/2 cups whole wheat flour (whole wheat bread flour if possible)
  • 1 1/2 teaspoons salt
  • 1/2 cup flax seeds

How to Make

  • Step 1: Add the warm water in a large bowl or in the bowl of a freestanding heavy-duty electric mixer fitted with the dough hook. Sprinkle the yeast over the water. Let stand for about 10 minutes, or until the yeast dissolves and foams.

  • Step 2: Stir in the soy beverage, oil, honey, molasses and salt.

  • Step 3: Add 5 1/2 cups whole wheat flour, mixing well.

  • Step 4: Add more flour, if necessary, until dough is moist but not sticky.

  • Step 5: Knead by hand on a floured board for 10 minutes, or on low speed in the mixer, adding a bit more flour if needed, until the dough is smooth and elastic.

  • Step 6: Knead in the flaxseeds.

  • Step 7: Form the dough into a ball and place in an oiled bowl, turning once to coat with oil.

  • Step 8: Cover the bowl loosely with a clean towel or plastic wrap and place in a warm, draft-free place until doubled in size, about 1 1/2 hours.

  • Step 9: Grease two 8 x 4-inch loaf pans.

  • Step 10: Punch the dough down, knead briefly, and form into two 8-inch long loaves.

  • Step 11: Place in the loaf pans seam side down.

  • Step 12: Cover loosely with oiled plastic wrap and let rise in a warm place until doubled, about 1 1/4 hours.

  • Step 13: Preheat the oven to 375?F.

  • Step 14: Bake for 40 to 45 minutes.

  • Step 15: Turn out of the pans and let cool on racks.
