Ingredients

The ingredients are:
  • 1 teaspoon seasoned salt
  • 1 chicken, whole, 3 pounds (broiling/frying chicken cut into serving pieces)
  • Guinness (1 bottle)
  • 1 tablespoon brown sugar, dark brown
  • 1 tablespoon lemon juice
  • 1 tablespoon oil (vegetable oil)
  • 1 tablespoon molasses, dark
  • 1/8 teaspoon red pepper sauce

How to Make

  • Step 1: Rub seasoned salt evenly over chicken.

  • Step 2: Arrange chicken in single layer in shallow 2-quart baking dish.

  • Step 3: Mix remaining ingredients in small bowl; pour over chicken pieces.

  • Step 4: Cover and refrigerate at least 4 hours or overnight; turn chicken over several times during marinating.

  • Step 5: Preheat coals in outdoor barbeque.

  • Step 6: Remove chicken from marinade; reserving marinade.

  • Step 7: Arrange chicken, skin-side up, on cooking rack 5-7 inches above hot coals.

  • Step 8: Cook until underside of chicken is dark brown, 20-25 minutes.

  • Step 9: Brush it with marinade.

  • Step 10: Turn chicken over; brush chicken with marinade.

  • Step 11: Cook until underside of chicken is dark brown, 20-25 minutes longer.

  • Step 12: Turn chicken over; continue cooking until chicken is fork tender, 5-10 minutes longer, brushing often with marinade.

  • Step 13: Serve hot or cold.
