Ingredients

The ingredients are:
  • 2 pounds fingerling potatoes (tiny Russian, or 2 lbs chopped new white potatoes
  • 6 garlic bulbs (cloves peeled and separated, larger cloves halved)
  • 1/3 cup oil (olive oil)
  • Kosher salt (amount to taste)
  • Cracked black pepper (amount to taste)
  • 1-2 tablespoons fresh thyme leave

How to Make

  • Step 1: Preheat oven to 400°F.

  • Step 2: Toss all ingredients into a mixing bowl and stir until coated.
