The ingredients are:
  • 1 pound boneless skinless chicken breasts (cut into bite-size pieces or boneless thighs, I use thighs)
  • 1 green bell pepper, chopped (seeds removed)
  • 1 small yellow onion (diced)
  • 1 jar (24 ounce) pasta sauce (use your favorite)
  • 1/2 pound dry pasta (mostaccioli pasta, cooked, drained)
  • 8 ounces mozzarella cheese (shredded, divided)
  • Salt and pepper

How to Make

  • Step 1: Cook the chicken cubes in large skillet with a little oil or butter for about 5 minutes.

  • Step 2: Add vegetables; cook 5 minutes or until chicken is done and vegetables are crisp-tender.

  • Step 3: Add sauce and pasta; cook 5 min. or until heated through, stirring occasionally.

  • Step 4: Stir in 1 cup cheese.

  • Step 5: Add salt and peppper, then top with remaining cheese.

  • Step 6: Cover; let stand 2 minutes or until cheese is melted.
