Ingredients

The ingredients are:
  • 2 swai fish fillets
  • 2 teaspoons oil (olive oil)
  • 1/2 whole onion (chopped or sliced)
  • 1 teaspoon oregano
  • 1 teaspoon minced garlic
  • 1 cup diced tomatoes, fresh (roma tomatoes)
  • Salt & pepper to taste

How to Make

  • Step 1: Preheat oven to 375 degrees, and prepare a baking dish with cooking spray.

  • Step 2: Saute the onions in olive oil until they begin to caramelize. Add the tomatoes, garlic, and seasonings. Continue to cook until tomatoes start to break down and release their juices.

  • Step 3: Place fish fillets in prepared baking dish and spoon tomato mixture evenly over the top.

  • Step 4: Bake uncovered for 30 minutes or until the fish flakes easily when tested with a fork.
