Step 1: Combine oats, sweetener, and salt in a small nonstick pot. Add almond milk and water. Bring to a boil, then simmer for 9 minutes. Stir often until thick and creamy.
Step 2: Add vanilla and cinnamon. Cool slightly then transfer to a bowl and refrigerate until chilled. Minimum of 90 minutes or overnight. I prefer warm oatmeal, so I skip the chilling step.
Step 3: Assemble Parfait: Add half the oatmeal to a tall glass. Top with half of the pudding and half of the banana slices. Repeat oatmeal, pudding, banana. Top with chocolate chips.
