  • 3 bacon slices (cut into 1/2-inch pieces)
  • 4 pints Brussels sprouts (ends trimmed and halved)
  • Coarse salt and ground pepper
  • 1 apple (cored and cut into 1/4-inch slices, each slice halved crosswise)
  • 2 teaspoons red-wine vinegar

How to Make

  • Step 1: Preheat oven to 425F. Place bacon in a single layer on a large rimmed baking sheet. Bake until browned, 10 minutes.

  • Step 2: Add Brussels sprouts in a single layerand season to taste with salt and pepper. Roast for 15 minutes, then add apple to baking sheet.

  • Step 3: Continue roasting until brussels sprouts are browned and tender, 10-15 minutes more.

  • Step 4: Toss vegetables with vinegar, and serve.
