Step 1: Preheat oven to 375F.
Step 2: Place chicken between two pieces of plastic wrap and pound to 1/4-inch thickness.
Step 3: Lay chicken with the nice side down (one side will be pretty roughed up from the pounding), and sprinkle with garlic salt.
Step 4: Scatter bacon evenly between the two pieces of chicken.
Step 5: Scatter bleu cheese crumbles evenly between the two pieces of chicken.
Step 6: Starting with the small end, roll chicken to completely enclose filling, tucking the ends in as needed (you'll want to use some toothpicks to secure it).
Step 7: Place rolls, split side up, in a shallow baking dish.
Step 8: Sprinkle both rolls with pepper and paprika.
Step 9: Bake at 375F for 45 minutes, or until chicken is completely done.
Step 10: Remove toothpicks before serving!
