Ingredients

The ingredients are:
  • 1 leftover stuffed pepper, cut up in chunks
  • 1/2 cup diced onion
  • 1/2 cup diced green peppers
  • 2 tablespoons oil
  • 1 (15 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce *(only to be used if you didn't use any on stuffed peppers)
  • 1/2 cup uncooked minute rice
  • 1/2 cup frozen whole kernel corn
  • 4 cups beef broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

How to Make

  • Step 1: In large saucepan, heat oil and saute onion and peppers. Add the rest of the ingredients (*see note for can of tomato sauce). Stir well and simmer covered for 45 minutes.
