  • 1/3 cup olive oil
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup dark rum
  • 5 green onions, finely chopped
  • 6 garlic cloves, minced
  • 2 teaspoons dried oregano, rubbed
  • 3 teaspoons cumin
  • 2 teaspoons salt
  • 1 bay leaf
  • 1/2 to 1 teaspoon black pepper
  • 3 pork tenderloins

How to Make

  • Step 1: In a bowl whisk together first 11 ingredients and transfer to a large heavy ziploc plastic bag, add in the tenderlons to the marinade; close bag tightly and turn to coat.

  • Step 2: Place the bag in a large bowl and refrigerate for 24 hours.

  • Step 3: Preheat oven to 400 degrees F.

  • Step 4: Transfer the tenderloins to a baking dish and discard the marinade.

  • Step 5: Cook for about 25-35 minutes.

  • Step 6: Let stand for 5 minutes before slicing.
