Ingredients

The ingredients are:
  • 2 (10 ounce) packages broccoli (frozen chopped broccoli or lightly steam an equal amount of fresh, squeeze out most of the water after thawing or steaming)
  • 3 chicken breasts (boneless, cooked and cubed)
  • 2 cans (10 ounce each) condensed cream soup (any kind you want)
  • 1 cup reduced-fat mayonnaise
  • 2 tablespoons lemon juice
  • 1/2 teaspoon curry powder
  • 2 garlic cloves, finely minced (or 1 to 2 teaspoon granulated garlic powder)
  • 1 cup grated reduced-fat cheddar cheese
  • 1/2 cup bread crumbs
  • 1 tablespoon melted butter

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Grease a 13x9-inch casserole pan.

  • Step 3: Combine the bread crumbs with melted butter; set aside.

  • Step 4: Arrange frozen broccoli evenly in bottom of greased casserole dish. (If you are using fresh broccoli, steam or boil lightly, until just underdone). Arrange cooked chicken cubes over broccoli.

  • Step 5: Mix together undiluted soups, mayonnaise, lemon juice, curry powder and minced garlic or garlic powder. Pour over chicken.

  • Step 6: Sprinkle with grated cheese.

  • Step 7: Top with buttered bread crumbs.

  • Step 8: Bake 30-35 minutes or until bubbly.
