Ingredients

The ingredients are:
  • 2 bone-in, skinless chicken breasts
  • 1/2 medium onion, chopped
  • 1/2 red bell pepper, chopped
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • 1 cup chicken broth (I used chicken bouillon)
  • 2 tablespoons flour
  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar

How to Make

  • Step 1: Heat oven to 375 degrees.

  • Step 2: Placed prepared chicken into glass baking dish - add chopped veggies and oil, stirring to coat evenly.

  • Step 3: Bake 10 minutes; stir veggies.

  • Step 4: While chicken is baking, prepare gravy. Mix flour with the lemon juice and balsamic vinegar to make a smooth paste. Slowly whisk in hot chicken broth.

  • Step 5: Add gravy mixture to pan, cover pan with foil, and bake 30 more minutes or until chicken is thoroughly cooked.

  • Step 6: Taste the gravy and adjust seasoning with additional salt and pepper.
