Ingredients

The ingredients are:
  • For Cupcakes:
  • 1/2 cup butter, room temperature
  • 2/3 cup sugar
  • 3 large eggs
  • 1/4 cup milk
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 ounces instant pudding, cheesecake flavor
  • Cream Cheese Frosting:
  • 1/4 cup butter, room temperature
  • 1 (8 ounce) package cream cheese
  • 1/2 teaspoon vanilla extract
  • 2 to 3 cups powdered sugar (to get desired consistency)
  • Teddy Graham Crackers to decorate

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Cream butter with sugar, then add the dry pudding mix and mix well.

  • Step 3: Add eggs one at a time, mixing well after each egg.

  • Step 4: In another bowl, whisk flour, baking powder and salt.

  • Step 5: Gradually add dry mix and then some of the milk, then dry mix, then milk until all of each is added.

  • Step 6: Pour cupcake mix into cupcake lined muffin tins.

  • Step 7: Bake 20 minutes and cool before adding frosting.

  • Step 8: TO MAKE THE FROSTING

  • Step 9: Cream together butter and cream cheese.

  • Step 10: Add vanilla extract and slowly start to add the powdered sugar until it gets to the consistency that you like.

  • Step 11: Fill a baggie with frosting and snip off the corner. In a circular motion squeeze onto cupcakes.

  • Step 12: On a small plate crush about 10 teddy grahams with the base of a glass. Sprinkle that on top of the cupcakes and then place a teddy graham in the middle!
