Ingredients

The ingredients are:
  • 2 pounds sausage (kielbasa or smoked sausage, sliced into coins)
  • 1 large yellow onion (cut up into large chunks)
  • 2 bell peppers (cut up into large chunks)
  • 3/4 cup barbecue sauce (or more depending on how much you like)
  • 1 tablespoon oil (olive oil, for sauteing)
  • 1 can (14 ounce) corn kernels, drained (optional, or fresh corn)
  • 2 zucchini (optional, sliced in 3/4 inch half moons)

How to Make

  • Step 1: Heat up a large frying pan with olive oil on medium high, while it is warming, cut up the veggies and kielbasa. Add them all to the pan at one time and saute.

  • Step 2: Cook uncovered for about 10-12 minutes, making sure everything does get coated with the olive oil while stirring. Stir every once in a while to make sure it doesn't burn, cook until veggies are tender crisp. The kielbasa will also be browning during this time.

  • Step 3: Add the barbecue sauce. I don't really measure the barbecue sauce, just squeeze it into pan. You don't want it soupy, just coating the ingredients. Heat until the barbecue sauce is heated.

  • Step 4: Serve immediately. (any veggies can be used, frozen or fresh.)
