Ingredients

The ingredients are:
  • 1 cup all-purpose flour (I use unbleached)
  • 1 cup cornmeal (YELLOW)
  • 1/2 cup white sugar
  • 3/4 teaspoon salt
  • 3 1/2 teaspoons baking powder
  • 1 egg
  • 1 cup milk (I normally use 1%)
  • 1/3 cup oil (canola or vegetable oil)

How to Make

  • Step 1: Preheat oven to 400. Spray or lightly grease a 9 inch round cake pan.

  • Step 2: Combine flour, cornmeal, sugar, salt and baking powder.

  • Step 3: Mix egg, milk and vegetable oil until well combined, and stir into dry ingredients. Pour batter into prepared pan. Bake 20 minutes. (18 is good for my oven) or until a toothpick inserted into the center comes out clean.
