Ingredients

The ingredients are:
  • 8 medium potatoes (russets, peeled, leave whole, do not slice)
  • 12 garlic cloves, peeled
  • 1/2 cup butter, softened
  • 1/2 cup whipping cream (33-35%)
  • 1 package (3 ounce) cream cheese (softened)
  • 1 teaspoon onion powder (optional but good to add)
  • 2 teaspoons salt, or to taste
  • Fresh ground pepper (optional and to taste)

How to Make

  • Step 1: Place the whole potatoes and garlic in a large saucepan; cover with cold water, then bring to a boil, reduce heat, cover and cook for about 25 minutes or until potatoes are just fork tender.

  • Step 2: Using a large slotted spoon remove the potatoes and the garlic to a large mixing bowl.

  • Step 3: Add the butter, cream and cream cheese and 2 teaspoons salt.

  • Step 4: Beat on low speed for 1 minute, then increase to medium speed, beating until potatoes are smooth.

  • Step 5: Season with more salt if needed.
