Step 1: Melt 1 tablespoon butter in a small nonstick skillet over medium-high heat. Pour in half of the beaten eggs, sprinkle with pepper, and cook without stirring for about 2 minutes. As edges set, lift them gently with a spatula to allow uncooked eggs to run underneath.
Step 2: When egg is almost completely set, add half of the salmon and half of the chives. Fold the set egg over the filling, remove from skillet, and keep warm while you repeat with remaining egg and filling. Serve.
