Ingredients

The ingredients are:
  • 1/2 onion, chopped (I used red onion)
  • 1 clove garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 small zucchini, peeled and diced
  • 1/4 cup quinoa (rinsed in cold water to eliminate the outer bitterness)
  • 3 cups chicken broth
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1 tablespoon flour
  • 1/2 cup milk
  • Salt & pepper to taste

How to Make

  • Step 1: Saute onions in a small amount of olive oil until translucent. Add garlic, mushrooms, and zucchini and continue to saute until all vegetables have started to wilt.

  • Step 2: Add rinsed quinoa, herbs, and broth and continue to cook (covered) 20 minutes until quinoa is done.

  • Step 3: Mix flour and milk until smooth and add to mushroom mixture. Add pepper and salt (if necessary depending on your chicken broth).
