Ingredients

The ingredients are:
  • 8-10 (8 inch) flour tortillas
  • 2 (15 ounce) cans black beans, rinsed, drained and lightly mashed
  • 1 cup salsa (I prefer medium spice)
  • 1 small onion, fine diced
  • 2 cups pepper jack or monterey jack cheese
  • 2 tablespoons cilantro, fine chopped
  • 1 lime cut in wedges
  • Olive oil
  • Garnish:
  • 1/2 cup sour cream
  • Salsa (optional)
  • 1 avocado, cut in wedges or thin slices (optional)

How to Make

  • Step 1: Beans ... Add the beans to a small bowl and "mash," with either a potato masher or the back of a fork. You want a bit of texture, so don't completely mash them into a "mush." Add in the salsa and onion and mix well.

  • Step 2: Quesadillas ... Lay the tortillas out and spread the bean mixture over 1/2 of the tortilla. These are going to folded in half and then grilled. Top the bean mixture with a squeeze of lime, the cheese and then the cilantro. Fold in half and brush the top with olive oil. We will brush the other side, when we flip them in the pan.

  • Step 3: Grill ... Lay the quesadillas in the pan - top side down, the side we brushed with olive oil. This will help to brown the quesadilla. Now you can brush the other side with olive oil. Grill 4-5 minutes on the first side until golden brown and repeat. The cheese should be good and melted.

  • Step 4: Serve ... My garnishes I like are avocado slices, sour cream, lime wedges; and you can also add a bit more salsa. ENJOY any time of the day!!
