Step 1: Celery ... Add the celery to a bowl and toss with olive oil, salt and pepper. Add to a baking sheet lined with foil or parchment and bake at 400 degrees for 15-20 minutes until, soft and tender. You don't want them to brown.
Step 2: Dressing ... Add everything including the celery to your blender and puree until smooth. I start with 1/8 cup of oil, but if you like your dressing a bit thinner, add the remaining 1/8 cup. Chill at least 1 hour before serving. ENJOY!
