Ingredients

The ingredients are:
  • 2 cups celery, cut in 1/2" pieces
  • 1 teaspoon vegetable oil
  • Pinch of salt
  • Pinch of pepper
  • Dressing:
  • 1/2 cup mayonnaise
  • 1/8-1/4 cup vegetable oil (depending on how thick you like your dressing)
  • 1/4 cups scallions, diced (white and green parts)
  • 1 tablespoon shallot, chopped
  • 1 garlic clove, chopped
  • 3 tablespoons champagne vinegar (white wine vinegar could be substituted)
  • 1/2 teaspoon dijon mustard
  • 1/2 tablespoon celery seed
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Celery ... Add the celery to a bowl and toss with olive oil, salt and pepper. Add to a baking sheet lined with foil or parchment and bake at 400 degrees for 15-20 minutes until, soft and tender. You don't want them to brown.

  • Step 2: Dressing ... Add everything including the celery to your blender and puree until smooth. I start with 1/8 cup of oil, but if you like your dressing a bit thinner, add the remaining 1/8 cup. Chill at least 1 hour before serving. ENJOY!
