Step 1: In a large mixing bowl, stir together the baking mix, egg, milk, seltzer water, sweet potato and spices. Do not overmix. Fold in the walnuts. Let batter rest 10 minutes.
Step 2: Meanwhile, preheat a griddle to 375 degrees F. or heat a large non-stick frying pan over medium-high heat.
Step 3: Drop batter onto griddle by the quarter-cupful. When bubbles appear around the edges and pancakes are golden brown on the bottom, flip. Cook on the other side until golden.
