  • 4 boneless, skinless chicken breast halves
  • 2 teaspoons lemon-pepper seasoning
  • 1 1/2 teaspoons olive oil
  • 1/3 cup balsamic vinegar
  • 1/4 cup low-sodium, reduced-fat chicken broth
  • 2 garlic cloves, minced
  • 4 teaspoons butter

How to Make

  • Step 1: Pound chicken to 1/4-inch thickness between two pieces of plastic wrap.

  • Step 2: Press lemon-pepper seasoning evenly onto both sides of chicken.

  • Step 3: In a large skillet, heat oil over medium heat until shimmering.

  • Step 4: Add chicken and cook about 7 minutes (or until juices run clear), turning once.

  • Step 5: Remove chicken to a warmed serving platter and keep warm.

  • Step 6: In same skillet, combine vinegar, broth and garlic; cook over medium-high heat, scraping up browned bits, about 2 minutes or until mixture is reduced and syrupy.

  • Step 7: Add butter to pan; stir to melt.

  • Step 8: Reduce heat to medium-low; return chicken to pan and cook 2 minutes on each side.

  • Step 9: To serve, pour remaining sauce from pan over chicken on plates.
