Ingredients

The ingredients are:
  • 4 cups chicken broth (or vegetable broth or bouilion)
  • 2 celery stalks, chopped
  • 1 whole onion, large (chopped)
  • 2 garlic cloves, crushed
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 can (19 ounce) lentils, rinsed and drained
  • 2 cups fresh spinach leaves, packed fresh (rough shredded)

How to Make

  • Step 1: Place in a large stock pot, the chicken broth, celery, onion, garlic and cayenne pepper; stir and simmer for 5 minutes.

  • Step 2: Rinse and drain lentils and stir into the broth mixture; bring to simmer and heat through, about 5 minutes.

  • Step 3: Just before serving, stir in the spinach and serve immediately.
