Step 1: Preheat oven to 375°. Boil egg noodles in a dutch oven pan to package directions.
Step 2: Meanwhile, saute celery, pepper and onion in olive oil until tender crisp.
Step 3: Drain noodles and place back in dutch oven, add all ingredients except for breadcrumbs and butter, and mix well. Place mixture into a greased 9x13 pan.
Step 4: Top with breadcrumbs and dot with the butter. Bake for 30 minutes or until starting to brown nicely. Serve!
