Step 1: Melt butter in heavy saucepan on top of stove.
Step 2: Add chopped onion, green peppers and celery; simmer until onions are translucent but not browned.
Step 3: Add flour and mix well.
Step 4: Add tomatoes, seasonings and lemon juice.
Step 5: Bring to a boil, stirring constantly.
Step 6: Reduce heat, cover and simmer for 7 minutes.
Step 7: Serve over warm omelette.
