Ingredients

  • 2 large baking potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons fresh ginger, grated, packed
  • 2 garlic cloves, minced

How to Make

  • Step 1: Preheat oven to 450 degrees Fahrenheit.

  • Step 2: Line a rimmed baking sheet with foil and coat with non-stick spray, set aside.

  • Step 3: Clean potatoes well.

  • Step 4: Leaving skin on, quarter the potatoes and cut those wedges in half.

  • Step 5: Rinse the potatoes and pat dry.

  • Step 6: Toss all ingredients together in a large bowl making sure potatoes are well coated.

  • Step 7: Pour over baking sheet and place in oven.

  • Step 8: Cook potatoes for 15 minutes per side then stand turn them on the skin side until cooked through, about 35 to 40 minutes altogether, depending on size of potatoes.
