Step 1: In a 4 cup jar and using a funnel, layer flour, baking soda, salt, cocoa powder, granulated sugar, brown sugar, semisweet chocolate chips and white chocolate chips.
Step 2: Store in tightly sealed jar in a cool spot for up to 1 month.
Step 3: To prepare cookies from mix, preheat oven to 350 F.
Step 4: Sift cookie mix into a bowl, setting the chocolate chips aside.
Step 5: In a separate bowl, beat butter till fluffy; beat in egg and vanilla (mixture will look curdled).
Step 6: Mix in dry ingredients; then stir in chocolate chips and mix to make a soft dough (use your hands if necessary).
Step 7: Drop by heaping tablespoon, 2 inches apart, onto parchment paper-lined baking sheets.
Step 8: Bake for 12 minutes or until firm to the touch and no longer glossy.
Step 9: Transfer to cooling racks.
