  • 1/2 cup potato starch
  • 3/4 cup cornstarch or 3/4 cup arrowroot
  • 2 teaspoons xanthan gum or 2 teaspoons guar gum
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup granulated sugar
  • 1/2 cup shortening or 1/2 cup coconut oil (solid)
  • 3/4 cup almond milk or coconut milk
  • 1 egg, beaten

How to Make

  • Step 1: Preheat oven to 350° and grease a 9" cake pan or pie tin.

  • Step 2: In a large bowl, combine the dry ingredients, whisking lightly.

  • Step 3: With a pastry cutter, mix in the shortening until the dough becomes like small peas.

  • Step 4: In a small bowl, combine the milk and egg and add to the large bowl, mixing lightly. It will be sticky, like cake batter, not like regular dough.

  • Step 5: Pour into cake pan, smooth top, and bake for 25-30 minutes, until toothpick comes out clean; let cool. Top with your favorite fruit, either sliced or crushed, and non-dairy whipped cream, if desired.
