Ingredients

The ingredients are:
  • 1 tablespoon oil (olive oil)
  • 550 grams turkey drumsticks (2 drumsticks, and thighs or 6 chicken thighs)
  • 300 grams sweet potato (2 medium yam, cut into 1" pieces)
  • 140 grams carrots (3 medium carrots, cut into 1" pieces)
  • 1 parsnip (medium parsnip, cut into 1" pieces)
  • 1 yellow onion (medium onion, sliced)
  • 1 cup apricot preserves
  • 1/2 cup maple syrup
  • 1/2 cup teriyaki sauce
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoon cornstarch
  • 2 tablespoon water (cold)

How to Make

  • Step 1: Brown turkey/chicken pieces in large oiled frying pan on both sides.

  • Step 2: Place veggies in a 4 qt slow cooker or large covered roasting pan; top with turkey pieces.

  • Step 3: In bowl, combine jam/preserves, maple syrup or honey, teriyaki sauce, ginger and cayenne; pour over turkey.

  • Step 4: FOR SLOW COOKER: cover and cook on low for 6 -8 hours or until turkey is tender.

  • Step 5: FOR OVEN METHOD: cover pan place in a 275F oven for 3 - 5 hours depending on your oven; or until turkey in tender.

  • Step 6: When turkey is done, remove turkey and veggies to a platter and keep warm.

  • Step 7: Transfer cooking liquid to a small saucepan and skim any fat; bring to a boil.

  • Step 8: Combine cornstarch and cold water and mix until smooth; gradually stir into pan.

  • Step 9: Bring to boil and stir constantly until thickened.

  • Step 10: Serve with turkey and veggies.
