Step 1: Melt the chocolate in a double boiler stirring constantly.
Step 2: Mix in chopped candy canes and almonds (mix cherries and peppermint flavoring at this point if desired).
Step 3: Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm.
Step 4: Break into pieces.
