Ingredients

The ingredients are:
  • 4 to 5 pound beef chuck (roast)
  • 3 tablespoons Worcestershire sauce
  • 1/2 teaspoon garlic power
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 onions, medium (peeled and quartered)
  • 6 to 8 potatoes, scrubbed and quartered
  • 4 turnips, peeled and quartered
  • 1 pound carrots, peeled and cut into chunks
  • 1 cup wine, red (I prefer Cabernet or Pinot Noir)
  • 1 cup beef stock
  • 1 cup water (more if needed)
  • 3 garlic cloves, minced
  • 1 tablespoon cornstarch dissolved in
  • 1/2 cup water

How to Make

  • Step 1: Preheat oven to 325F; coat a large roasting pan with cooking spray.

  • Step 2: Place roast in prepared pan; pour Worcestershire sauce over, then sprinkle with seasonings.

  • Step 3: Arrange vegetables around edges and slightly over top of roast.

  • Step 4: Combine liquids and garlic; pour over top.

  • Step 5: Cover and roast for 4 hours, checking once an hour to see if more water is needed.

  • Step 6: Remove roast to a serving platter and cover to keep warm.

  • Step 7: Remove vegetables to a serving bowl and cover to keep warm.

  • Step 8: Place roasting pan with juices on stove over medium-high heat.

  • Step 9: Slowly stir in cornstarch mixture; continue heating, stirring frequently, until gravy thickens.

  • Step 10: Serve roast and vegetables with gravy to pass.
