Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 carrot, grated
  • 1 stalk celery, chopped
  • 1 bell pepper, chopped
  • 1 jalapeno, diced small
  • 4 cups mixed beans
  • 1 cup frozen corn
  • 2 1/2 cups vegetable stock
  • 4 cloves garlic, pressed
  • 2 tablespoons chili powder
  • 1 tablespoon chipotle chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dark cocoa powder
  • 2 1/2 teaspoons dried oregano
  • 1 (28 ounce) can diced tomatoes
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: In a Dutch oven or large heavy bottom pan, heat the oil over medium heat.

  • Step 2: Add the onion, bell pepper, jalapeno, carrot and celery and cook until onion is translucent.

  • Step 3: Add the remaining ingredients and bring to a boil; reduce heat and simmer, covered, for 30 minutes.

  • Step 4: Ladle into bowls and serve.
