Step 1: Place the noodles, half the seasoning packet and the ground ginger in a shallow bowl.
Step 2: Pour 1 cup boiling water over the noodles and let sit for 10 minutes; stir and set aside.
Step 3: In a wok or large skillet, heat the olive oil and toss in the onion, garlic and shrimp and cook for a couple of minutes.
Step 4: Mix the sesame oil with the noodles and add to shrimp.
Step 5: Heat through and serve.
