Ingredients

The ingredients are:
  • 1 green bell pepper (seeded and chopped)
  • 2 jalapenos peppers (seeded, deveined and chopped)
  • 2 yellow onions (peeled and chopped)
  • 2 celery ribs (chopped)
  • 1 large leek (white parts only, well rinsed and chopped)
  • 6 garlic cloves (pressed)
  • 2 tablespoons ground cumin
  • 2 tablespoons dried oregano
  • 2 tablespoons dried basil
  • 1 teaspoon fresh rosemary
  • 1 tablespoon olive oil (extra virgin)
  • Salt and freshly ground pepper, to taste
  • 8 cups low-sodium chicken broth
  • 1 can (19 ounce) white kidney beans (drained and rinsed)
  • 3 pounds boneless skinless chicken breasts (cubed)
  • 2 fresh limes (juiced)
  • 2 fresh lemons (juiced)
  • 1/2 cup chopped fresh cilantro leaves
  • 4 green onions (chopped, for garnish)

How to Make

  • Step 1: In a large saucepan or Dutch oven, place all the peppers, onion, celery, leek, garlic, cumin, oregano, basil, rosemary, olive oil, sea salt and pepper; cook over medium heat until onions become translucent.

  • Step 2: Add the broth, beans and cubed chicken and bring mixture to a boil.

  • Step 3: Reduce heat and let mixture simmer for 40 minutes.

  • Step 4: Add lime and lemon juices, cilantro and green onion.

  • Step 5: Remove from heat and serve immediately.
