Step 1: Whisk together apricot jam, orange juice, lemon juice and ginger to make a glaze; brush the glaze on both sides of the steaks; grill steaks over hot fire for approximately 10 to 15 minutes minutes, (depending on the thickness of the steaks) brushing often with glaze
Step 2: If using a grill pan, preheat it to very hot to sear the steaks. If using an in door griddler, cook half the time.
