Step 1: Preheat oven to 350 degrees F. Core the apples (do not remove bottoms) and peel just the center of outer skin (do not remove all skin). Set aside.
Step 2: In mixing bowl, combine all other ingredients except the lemon juice. Place the apples upright in a buttered 8x8 glass baking dish. Sprinkle sugar mixture generously on and inside each apple. Squeeze lemon into each core hole.
Step 3: Bake for 30 to 40 minutes. Best eaten warm.
