Step 1: In a large skillet over high heat, melt butter with olive oil. Add the onions and saute on medium for about 5 minutes, stirring frequently. Add the garlic and celery and sautee for 2 minutes. Remove from heat.
Step 2: Add the chicken stock, fresh sage, bread cubes and season with salt and pepper to taste. Stir well to fully blend. Transfer to a bowl and chill until ready to stuff your turkey. This can be made a day ahead.
