Ingredients

The ingredients are:
  • 3 granny smith apples, washed well, cored , cut into 8 wedges
  • 2 medium red potatoes, scrubbed, cut into 1 inch pieces
  • 1 cup whole baby carrots
  • 1 cup rutabaga, peeled cut into 1inch pieces
  • 1 medium parsnip, peeled cut into 1 inch pieces
  • 1 medium red onion, peeled, cut into 8 wedges
  • 1 medium red pepper, chopped
  • 1 cup low sodium beef broth
  • 1/3 cup real maple syrup
  • 3 tablespoons olive oil
  • 1/3 cup dried cranberries
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 teaspoon cinnamon

How to Make

  • Step 1: Combine all the vegetables in a large bowl or zip lock bag. In measuring cup combine the broth, maple syrup, oil, cranberries, rosemary and cinnamon, stir and pour over the the veggies. Gently mix.

  • Step 2: Transfer the mixture to lightly greased shallow oven proof dish (13" x 9")

  • Step 3: Bake in 400f oven for 1 hour, until the veggies are tender and begin to turn golden
