  • 1/2 cup brown sugar (packed)
  • 1/2 cup pecans (chopped)
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • CAKE
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt (pinch)
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 1 cup buttermilk
  • 2/3 cup oil
  • 1 1/2 cups brown sugar (packed)
  • 1/2 cup dried blueberries (or cranberries)
  • 1/3 cup pecans (chopped or walnuts)

How to Make

  • Step 1: In a bowl Combine ingredients for the topping and set aside. In another Combine flour, baking powder, baking soda, salt, allspice, and nutmeg.

  • Step 2: Beat eggs, buttermilk, oil, and brown sugar in mixing bowl. Add dry ingredients, stirring to blend well. Stir in berries and pecans. Spread evenly in greased 9" x 13" cake pan. Sprinkle topping evenly over batter. Cover tightly with plastic wrap and refrigerate overnight.

  • Step 3: In the morning, remove plastic wrap from cake and bake at 350°F for 45 minutes, or until toothpick inserted in centre comes out clean. Let stand 5 minutes before cutting.
