Ingredients

The ingredients are:
  • 1 pound package smoked sausage, or smoked turkey sausage, cut into bite-size pieces
  • 1/2 small head of cabbage, shredded
  • 1 medium carrot, cut in 1/4 inch strips, 2 inches long
  • 1/2 large onion, sliced
  • 1 green pepper, thinly sliced
  • 2 cloves garlic, finely minced
  • 3 medium yukon gold potatoes, cut into 1 inch cubes
  • 1 1/2 cups red seedles grapes
  • 1 tablespoon oil or more
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 sprigs fresh rosemary, finely chopped, or 1 teaspoon dried rosemary crushed
  • 1 teaspoon caraway seeds
  • 2/3 cup chicken stock
  • 1 cup shredded cheddar cheese

How to Make

  • Step 1: Place 1 tablespoon oil in skillet on medium heat and brown sausage pieces. Remove from pan and set aside. Add onions and peppers to same skillet and more oil if needed. Cook until onions are translucent, then add garlic, potatoes, rosemary and butter. Stir and cover with a lid. Cook until potatoes are just slightly soft, stirring occasionally.

  • Step 2: Preheat oven to 375 degrees F. Place cabbage, carrots and grapes in 9 x 13 inch baking dish. Sprinkle with caraway seeds, salt and pepper. Add cooked sausage and pepper and onion mixture and stir well to mix. Add chicken stock and sprinkle cheddar cheese on top. Place in preheated 375 degrees F. oven and roast for 45 minutes.
