Ingredients

The ingredients are:
  • 1 (6 ounce) box herb stuffing mix
  • 1 cup boiling water
  • 3 tablespoons butter (or margarine)
  • 2 boneless, skinless chicken breast halves, sliced thin against the grain
  • 6 slices bacon, rough chopped
  • 1 (8 ounce) block extra-sharp cheddar cheese, grated
  • 1 (15 ounce) can peas and carrots, drained
  • 1 (15 ounce) can cut green beans, drained
  • 1 (10.75 ounce) can condensed cream of mushroom soup (I used 98% fat free)
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1/2 to 1/3 cup milk (I used fat free)
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

How to Make

  • Step 1: Preheat oven to 400F; spray a 9x13-inch casserole dish with cooking spray.

  • Step 2: Combine stuffing mix, water and butter in a bowl; let stand 5 minutes, then spread into bottom of prepared casserole.

  • Step 3: In this order, layer chicken, bacon, cheese, peas and carrots, and green beans into casserole.

  • Step 4: In the same bowl you used for the stuffing mix, combine soups, milk, parsley, salt and pepper; spread over top of casserole to completely cover.

  • Step 5: Bake at 400F for 45 minutes.
