Ingredients

The ingredients are:
  • 3/4 cup red wine vinegar
  • 1 white onion, sliced into thin rings
  • 2 quarts watermelon, cubed
  • 1/4 cup lime juice
  • 1 jalapeno chili, seaded and minced (the recipe said sliced)
  • 1 tablespooon fresh basil, minced
  • 1 tablespoon fresh mint leaves, minced
  • 8 ounces Feta or Cotija Cheese, crumbled
  • 1/2 teaspoon salt
  • 1 teaspoon pepper (I omitted)
  • 1/4 teaspoon cayenne (I omitted)

How to Make

  • Step 1: Heat vinegar in a small pan over high heat until it boils. Add onions and cook, turning ocassionally, until they're pink and most of the vinegar is absorbed, about 5 minutes. Remove from pan and allow to cool, then roughly chop.

  • Step 2: Mix the remaining ingredients in a large bowl. Add onions and toss to combine.
